Gluten free, no corn syrup, and real food ingredients, what’s not to love!?
DirectionsPreheat oven to 375 degrees. For the Crust: In a food processor, combine all dry ingredients and pulse to mix. Add egg and mix. Evenly distribute butter pieces and pulse until dough creates a ball. Using a spatula press dough into pie pan and place in fridge. For the Filling: In a medium bowl add butter and coconut sugar and set aside. Simmer syrup in a small pan until it begins to bubble up. Pour heated syrup into bowl and whisk until butter completely melts. Add vanilla. Slowly whisk in eggs until smooth. Remove crust from fridge and pour filling over top. Arrange pecans on top and bake for 30 minutes. The pie is absolutely delicious warm, but it will crumble more like a crisp. If you prefer pretty cut slices allow pie to completely cool and store in the fridge. However, if you are impatient and can look past a not-so-perfect slice, I recommend enjoying some warm for the perfect cozy treat. ** I’m a hack cook and really don’t create my own recipes. The only caution I have for making this as healthy as possible, is it does make me more comfortable letting my kids (and myself if I’m honest) to have a little extra. Letting them trade one processed grocery store cupcake for a large piece of homemade organic pie is a trade I’m willing to make. This pie is easy for me to whip up before any party and is how we avoided candy on Halloween this year. When wading through the health world I follow the “ God knows what is best” rule when picking foods. The closer food is the way it was intended to be the more comfortable I am with it, so I’ll never swap artificial sweeteners in no matter how “ healthy” the claims may be. We typically use honey, maple syrup, or coconut sugar as sweeteners and haven’t felt like we’re missing out on anything. If you like nerding out like me, check out this podcast on Maple Syrup.
